You’re a part of the family when you dine at Ellie’s, a restaurant inspired by dining traditions that harmoniously balances an art-filled, modern aesthetic with great food and genuine hospitality at every table. Our seasonal American cuisine is refined yet approachable, staying true to our namesake Ellie Hall, an artist and mother who emanated elegance and warmth with a fondness for lively conversation and friendly informality. The menu draws from her family’s diverse heritage and traditions and results in uniquely tasteful interpretations in every dish.

Meet Ellie Hall

Named after owner Craig Hall’s mother, Ellie was a confident trailblazer for women’s rights and was a compassionate teacher and artist who always looked for the beauty in life, possessing a resolutely independent spirit. One of her greatest pleasures in life was gathering friends and loved ones to share a delicious meal and spirited conversation, a communal endeavor that brought her immense joy. It is in this spirit of togetherness and joie de vivre that Ellie’s was created.

Executive Chef Eric Dreyer

The Artist in the Kitchen

Texas native Eric Dreyer has received numerous accolades from diners and critics alike since the beginning of his culinary career at age 20. Working at multiple high-profile culinary establishments in the Los Angeles area, his creativity and talent landed him at a duo of AAA Four Diamond restaurants before returning to his home state to be part of the opening team at Fearing’s inside The Ritz-Carlton, Dallas. Elated to be a part of the HALL Arts Hotel team and at the helm of Ellie’s, he describes the menu as “Napa-inspired, seasonal modern American cuisine with simple and approachable ingredients and elevated presentations.”

Haydee Hernandez

Haydee, a Texas native, has been exposed to an array of restaurants, from casual to fine dining. She is motivated by the connections and relationships she’s acquired through her many roles. After graduating from the prestigious Cuffs and Buttons craft cocktail program, Haydee began working as a bartender in the award-winning bars of the Joule hotel, where she led the opening of five successful concepts. Haydee was noticed by the Dallas Observer as “The Female Bartenders Who Rule Dallas’ Cocktail Scene”. In her most recent management role at Americano inside the Joule, she was fortunate to work in an established restaurant with a strong focus in Italian wines and a relaxed and fun environment. It was at Americano that she curated a thoughtful yet approachable beer, wine and cocktail list and is on her way to pass her certified sommelier exam through the Court of Master Sommeliers. Haydee also worked alongside her partner of 23 years in the opening of their family owned, award winning restaurants. It was here that her entrepreneurial spirit thrived through the daily operations of running a successful business. Haydee has a keen eye for attention to detail and believes consistency and a strong bond of trust within her team are vital in the success of a restaurant. At Ellie’s, Haydee would like to continue instilling a polished and caring service philosophy among her team. She is excited to work in a chef-driven concept and with a team that focuses on making sure every guest has a memorable experience.

Looking for a relaxing pre- or post-event location? Or perhaps you’d enjoy the frequent live music at Ellie’s Lounge as you sip specialty cocktails or your favorite wine vintage. With an elegant Steinway grand piano as its centerpiece, both local and national entertainers will fill the room in perfect harmony.
