Our seasonal American cuisine is refined yet approachable, staying true to our namesake Ellie Hall, an artist and mother who emanated elegance and warmth with a fondness for lively conversation and friendly informality. The menu draws from her family’s diverse heritage and traditions and results in uniquely tasteful interpretations in every dish.

Meet Ellie Hall

Named after owner Craig Hall’s mother, Ellie was a confident trailblazer for women’s rights and was a compassionate teacher and artist who always looked for the beauty in life, possessing a resolutely independent spirit. One of her greatest pleasures in life was gathering friends and loved ones to share a delicious meal and spirited conversation, a communal endeavor that brought her immense joy. It is in this spirit of togetherness and joie de vivre that Ellie’s was created.

Executive Chef Eric Dreyer

The Artist in the Kitchen

Texas native Eric Dreyer has received numerous accolades from diners and critics alike since the beginning of his culinary career at age 20. Working at multiple high-profile culinary establishments in the Los Angeles area, his creativity and talent landed him at a duo of AAA Four Diamond restaurants before returning to his home state to be part of the opening team at Fearing’s inside The Ritz-Carlton, Dallas. Elated to be a part of the HALL Arts Hotel team and at the helm of Ellie’s, he describes the menu as “Napa-inspired, seasonal modern American cuisine with simple and approachable ingredients and elevated presentations.”

Bhuv Khanna

Ellie’s General Manager Bhuvanesh “Bob” Khanna brings to Ellie’s a world of experience—literally. Holding high-level positions after assisting in the opening of multiple iconic properties around the globe, he has spent the last two decades fine-tuning the art of hospitality with impeccable leadership skills that led to earning a coveted Lean Six Sigma Green Belt. As a Certified Level 1 Sommelier, Khanna has assembled a list of notable wines consisting of personal favorites and unique finds. “I have a genuine passion for curating gastronomic experiences and culinary marvels, so I’m thrilled to be working alongside Executive Chef Dreyer and HALL Arts Hotel as we conceptualize the essence of Ellie’s.”

With an elegant Steinway grand piano as its centerpiece, both local and national entertainers will fill the room in perfect harmony.
